Winemaking
From the earliest freshly ripened red grapes, the grapes are placed in a soft press for a very short period, giving a pink must. The alcoholic and malolactic fermentation take place immediately at controlled temperature, enhancing the elegance of the sunsets color and the freshness of the original fruits. Subsequently the wine rests in stainless steel tanks at a temperature of 10 ° C. It is bottled in the year following the harvest.
