Lemon cake of the Amalfi coast
300 g of flour
300 g of sugar (for cake)
100 g of sugar (for icing)
3 coffee cups of milk
3 cups of seed oil
3 lemons of the Amalfi Coast
1 sachet of baking powder
Beat egg yolks with sugar, add the milk and mix well. Put the flour in the rain and stir it. Add some oil and then follow the beaten egg whites, stirring from the bottom up, the grated rind of three lemons, a cup of limoncello, a pinch of salt, and finally the sachet of baking powder.
Bake it at 160 degrees for about 40 minutes. Meanwhile, to prepare a soft icing by squeezing the three lemons, in a saucepan with 100 grams of sugar and heated until the sugar has melted.
In place of the icing, you can sprinkle the cake with icing sugar.
Serve it when it has cooled down with the lemon iqueur "I giardini di Ravello".
