Put the tuna in a bowl after having drained it from the olive oil and, crushing it with a fork, reduce it as much as possible in a homogeneous mixture.
Add Parmesan cheese, egg and chopped parsley. Mix all the ingredients until they form a uniform mixture.
Add salt and pepper and start adding breadcrumbs until the mixture hardens, making it workable with your hands.
Then form the meatballs with a slightly flattened shape and roll them in the breadcrumbs.
Bring the oil to temperature and fry the meatballs on both sides.
Place them on a sheet of kitchen paper to lose excess grease before serving them.
