Pasta with potatoes and “Monk provolone cheese”
Ingredients for 6 people
• 2 potatoes
• 1 onion
• 1 celery
Chop onion and celery, brown them in a saucepan with some olive oil; add peeled and cut potatoes like cubes, sprinkle with a cup of water, add some salt and cook for about 15 minutes.
Add more water: boil and calculate five minutes of cooking from the kettle; pour the pasta and cook it taking care the soup is quite thick.
Grate the provolone cheese; add it in to the soup, mix well and serve.
You can decorate each portion with two slices of provolone and a tuft of rosemary.
